3/4 cup barley 1 1/2 cup packed parsley, chopped 1/4 cup chopped fresh mint 1/2 small cucumber chopped 1 chopped tomato 4 spring onions 1/3cup olive oil 2 tabs lemon juice 1 clove garlic, crushed salt & pepper to taste Put barley in dry pan, stir over heat until lightly browned. Remove from heat. Add barley to a pan of boiling water. Simmer uncovered for approximately 25 minutes, till tender. Drain well. Cool. Combine barley with remaining ingredients, in a bowl. Mix well.
