STUFFED BUTTERNUT


2 medium butternuts- halved and pips removed. 1 small onion chopped. 1 clove garlic chopped. 5ml ginger, crushed. 4 mushrooms, sliced. 20 ml breadcrumbs or crushed corn flakes, 20ml sliced almonds. 60ml crumbled goat's feta. Dash of nutmeg. Salt & pepper to taste. Hollow the butternut and spray the outside of the butternut with olive oil spray. Mix all the ingredients for the filling together. Place the stuffing firmly into the butternut and spray with olive oil. Bake at 180C for 1 ½ to 2 hours.
