˝ packet firm tofu, ˝ onion, 1 green pepper, cut into strips. 1 tsp vegetable stock powder, ˝ tsp turmeric, ˝ tsp black pepper, 1 Tabs extra-virgin olive oil, 1 spring onion, 2 Tabs chopped parsley. Wrap the tofu in a tea towel, to absorb moisture, and set aside. Sauté onion in olive oil. Add green pepper and sauté for a further 5 minutes until limp. Add crumbled tofu. Add the vegetable stock powder and turmeric. Cover with a lid and allow to gently steam for 5 minutes. Sprinkle the black pepper, chopped spring onion and parsley on top. Serve with a crisp salad.
