100g chopped pecan nuts, 225g chopped mushrooms, 100g whole-wheat bread crumbs, 100g grated carrots, 1 finely chopped onion, 2 tabs chopped parsley, 1 tsp thyme, 1 tsp marmite, 4 Tabs boiling water, salt & pepper to taste. Mix together the nuts, mushrooms, breadcrumbs, carrots, onion and herbs. Dissolve marmite in water and add to mixture, with salt and pepper to taste. Press mixture into a greased 1-litre loaf tin and smooth on top. Bake at 190C for 35 to 40 minutes until firm to the touch.
