NUT LOAF


½ cup celery, ¾ cup walnuts, ¾ cup ground pecan nuts or sunflower seeds, 2 ½ cups rice milk ( or soya milk ) 1 tsp dried basil, 1 tsp dried oregano, 3 cups bread crumbs ( or gluten-free crumbs, or corn flakes ) salt 7 pepper to taste, chopped onion & crushed garlic (optional) Preheat oven to 175 degrees C. Lightly oil a loaf pan. In a medium size frying pan, sauté the onion, celery & garlic I 3 tablespoons of water until cooked. Combine all the ingredients together and mix well. Place mixture in a lightly oiled loaf pan and bake 60 to 90 minutes or until the loaf is cooked through. Serve hot with fresh salad.
