Mix 2 cups cooked brown rice, 1 cup soya or rice milk, ½ cup chopped walnuts,1 tsp lemon juice + bit of peel, pinch of salt, 2 tablespoons honey ( to taste ) ¼ teaspoon coriander OR cinnamon, 1 teaspoon vanilla, ¼ cup pitless raisins. Bake at 180 degrees C for approximately 45 minutes. Top with coconut and cinnamon.
