½ cup onion, chopped 1 clove garlic, minced 1 Tablespoon olive oil 250ml vegetable stock 250ml water 1 ½ cups soya mince 1 cup uncooked brown rice 1 teaspoon dried oregano ½ teaspoon dried thyme ½ teaspoon salt ½ teaspoon ground pepper 1 can diced tomatoes 1 cup zucchini, diced ½ cup sliced celery ¼ cup chopped parsley Cook onions and garlic in oil until tender. Add broth, water, textured soya mince, brown rice, and seasoning. Bring mixture to boil. Simmer, covered, for 30 minutes. Add tomatoes, zucchini, and celery; return to boil, reduce heat and simmer 20 more minutes or until rice is tender. Sprinkle individual portions with parsley.
