Cube 3 firm rounds of feta or 400g firm tofu. Drain on paper towel. Place in a sterilised glass jar with 2 halved red chillies (optional) 5 springs thyme, a thick strip of lemon rind, 2 cloves garlic, 1 tablespoon black mustard seeds, 1 teaspoon black pepper corn and 2 laurel leaves. Top up with vergin olive oil and marinate at room temperature for 4 hours. P.S. For tofu marinate you can add some soya sauce to taste. Serve grilled on toasted rice cakes.
