Preheat oven to 200 degrees C.
Put all the 9 dry ingredients into a large bowl and mix well.
Add the oil, orange juice, grated apple and carrot.
Mix again. Stir in the rind and dried fruit/cherries.
grease and flour (with rice flour) an eight inch cake tin.
Put the mixture into this, levelling off the top.
Bake near the top of the oven for +- 1 hour. (Keep your nose on stand-by)
Test to see if it is done. Leave for a minute or two before turning it out on a wire rack to cool.
When it is absolutely cold, level off the top of the cake with a bread knife if necessary. Spread lightly with apricot jam ready for the marzipan.
