Fruity Sago Pudding (gluten- , egg-free)


600 ml milk or rice milk or soya milk, pinch of salt, 35g raisins or mixed dried fruit, 30 g fructose, 45 g sago, rinsed, ground nutmeg or cinnamon to sprinkle, 20g butter Place milk in a saucepan and heat slowly. Add salt, raisins and sugar, bring to the boil stirring occasionally. Sprinkle sago over surface, stir frequently until sago is transparent and milk mixture has thickened, about 20 minutes. Turn mixture into a lightly buttered ovenproof dish, sprinkle with cinnamon or nutmeg. Dot with butter & bake at 200 degrees C 15 to 20 minutes, or until lightly browned. Serve at once ( Serves 4 )
