CASHEW BANANA CREAM PIE


(for wheat-free pie: make sure the granola is wheat-free and substitute the flour for gluten-free flour or corn flour) 1/3 cup raw cashews, ½ cup cooked rice, ½ cup dates, 1/8 tsp salt, 1 tsp vanilla, 4 tabs flour, water as needed to make smooth ( about 2-1/2 cups ),2 bananas, Granola crumb crust. Blend all ingredients except bananas in blender. Place in saucepan on stove and boil, stirring constantly, until thick. Place 1 sliced banana in bottom of pre-baked crust, add the cooled filling and top with another sliced banana. GRANOLA CRUMB CRUST 3 cups granola, ground. 2 tsp coriander. 3-4 Tabs coriander. 2 Tabs honey. Combine ingredients. Press into pie pan. Bake at 350 degrees for 30 minutes.
