¼ cup fresh carrot juice 1 large tablespoon soya milk powder Olive oil Pinch of salt 2 tablespoons dill freshly minced Pour the carrot juice into a blender. Start machine adding the soya milk powder. Blend for a few minutes, then start adding the oil in a slow steady stream until the mixture thickens like mayonnaise. Remove from blender and stir in the dill. Add salt and allow to stand to marinate. Little lemon juice may be added, as this mayonnaise is naturally sweet.
