½ ripe papaya ( about 1 cup ) peeled and seeded. 1 banana peeled and cut into chunks. Put the papaya in a blender and blend just enough to break up the fruit add the banana ; blend until smooth. Eat immediately Serves 1 VARIATION: add1-2 tablespoons raw almond butter and blend Or alternatively replace the almond butter with 3 teaspoons raw tahini and blend. 2 pitted prunes or figs can also be blended in. This is a very filling pudding and makes an ideal summer meal for an after-school snack.
