Oil for grilling, 2 small aubergines, thickly sliced into rounds, 2 ripe tomatoes, thickly sliced into rounds, 1 ball mozzarella, thickly sliced, 2 big dollops of basil pesto or tomato pesto, salt & pepper. Lightly oil aubergines and place under a pre-heated grill. Grill on both sides, until golden. Remove from heat and allow to cool. To make the stack start with the tomato, followed by the aubergine and then the mozzarella. Then reverse the order, ending with aubergine & tomato. Season to taste. Warm in a pre-heated ( 200 deg. C )oven for about 6 minutes or until the cheese starts to melt. Serve topped with dollop of pesto or tomato pesto.
