Let's, today, look at a few unfamiliar products and their benefits. KASHA; Other name for buckwheat. Buckwheat is not related to wheat (very misleading) it is part of the rhubarb family. Buckwheat is gluten-free and high in all 8 essential amino acids as well as in calcium, vit E & B vitamins. Kasha is low in fat. For those of you who follow the blood group diet Kasha is Neutral for blood group O, Highly beneficial for A and on the Avoid list for B & AB. Kasha should be cooked for approximately 25 minutes (1 cup kasha to 3 cups water) and used in casseroles or on it's own with some cumin powder, garlic, onion, coriander salt, or as a breakfast porridge. SPELT; An ancient grain very similar to wheat but contains more protein. Spelt was grown as far back as 5000 years BC. Spelt contains gluten but many Wheat Intolerant people can digest Spelt without discomfort. If you are substituting Spelt for Wheat in a recipe, reduce the liquid by 25% and do not over knead as the gluten is sensitive. Besides Spelt flour you can also get whole spelt kernels, Spelt Flakes (similar to rolled oats) and ready made spelt breads which we are getting, freshly baked, every Thursday afternoon. For the blood group diet; O = Neutral, A = Neutral, B = Highly Beneficial, AB = Highly Beneficial. BULGAR WHEAT; or cracked, parboiled wheat. Popular in Eastern Europe. Used for making Tabule ( Recipe in previous newsletter, just substitute the barley for bulgur wheat) Blood group O = Avoid, A = Neutral, B = Avoid, AB = Neutral. ADZUKI BEANS; Originates in China, easy to digest bean, high in fiber, very low in fat. Slightly sweetish taste. Use the water as a tea. Does not require pre-soaking. Simmer 1 cup beans in 3 cups water till soft flavor like any bean dish. Blood group O = Highly Beneficial, A = Highly Beneficial, B = Avoid, AB = Avoid
